Hcmc has it right in terms of flavor. I traveled all across the Soldier Boy The supefather Shirt besides I will buy this southern half (Hue and everything below) and hcmc has the best food in general. Not that way in the rest of the country. I’m in the American South where fish sauce at Vietnamese restaurants are so watered down you don’t even really taste it. Its almost just sugar water at that point its so diluted. The city I’m in specifically has one of the largest viet populations outside of california. I’m also viet Texas, right? I heard Houston has a very large viet community. And I’m talking about the fish smells at my friend’s houses. One of my friend’s houses growing up smelled so bad of fish sauce. Even the ice had the distinct fish sauce smell. I could tell cause I put some of the ice in a water bottle, and it tainted the water bottle for like a week, lol. Over in the restaurants here, though, they dress up the fish sauce quite a bit with sugar and garlic and some other things to make it more palatable. But isn’t that what they do in vietnam as well? I remember having com tam in VN, and it was just like how I get it here in the US(the dipping fish sauce, of course, not the entire dish) Its a bit more than dressed up here where im at. They do add different stuff to it in vietnam also but specifically where im at the water and sugar ratio is much higher compared to everything else.

I used to go to this amazing Indian restaurant that cooked authentic Indian food. Then one day they decided to take all the Soldier Boy The supefather Shirt besides I will buy this spicy spices out of the curry and then they had like a side-dish of something spicy you could add to your curry. But they did it because they thought that’s what Australians wanted. It wasn’t (Australians who don’t like spicy food don’t eat notoriously spicy food period). There’s this great Vietnamese bakery in my town in Australia. They make money hand over fist and they’ve often got a queue that runs outside their bakery. They do amazing banh mi rolls but they have a soft roll option for idiots. I’m always just thinking, ‘Just eat it the way they make it and shut up’ lol. Yeah I mean it either can be bad, or it can be a transitional/gateway lol, revising things to suit a country’s palette makes sense, like x country is used to these flavors, due to their agriculture, climate, etc, so they tend to be used to these types of foods, so making a foreign dish have some of those flavors can help it grow in popularity, and maybe cause many to even try the authentic one after!
