The zillions of shops and roasters wouldn’t exist if there were zero skill involved in creating a coffee beverage. Temperature, grind size, type of roast, amount of coffee, amount of water, and time are all variables you can modify to make coffee better (or worse). Small changes can make a big difference in your finished drink. But if you’re covering up the flavor of coffee with a lot of milk and sugar, it’s not really worth the trouble.

I’m just some guy who likes coffee a lot and went down a rabbit hole with grinders, pour overs, and a whole lot else. I order nice coffee and drink it black, and if I fuck it up by zoning out between pours (because I haven’t had coffee yet), it tastes different. I’m in it for the caffeine, not taste and presentation. It could come from an Olympic-grade barista or a hotel coffee pot; goes in and comes out all the same for me. I actually drink coffee because my liver doctor told me to drink 2 cups a day, it helps repair your liver (along with weight loss, and a low fat, low sodium diet.) But since I started drinking it daily, I’ve really come to enjoy it. I pretty much need to have at least 1 source of caffeine a day, if not 2-3. I otherwise get some pretty bad migraines. I’ve built such a high tolerance that I can’t remember the last time I ever actually felt ‘awake’ or get the jitters. At this point, it’s just migraine prevention.
