Defrosting (properly) and refreezing doesn’t cause harm itself. The unsafe part is when you leave it defrosting too long, which easy to do if you’re doing it multiple times. Defrosting it on the counter is actually riskier than defrosting twice over safely. that’s you eating the food a couple hundred times and dodging bullets. now extrapolate that advice to everyone in the world who cooks chicken, and you get sick or dead people. your food intake is very small, everyone’s food intake is very large. so the guideline is to not do that. bacteria can grow on the surface and produce toxins while the inside is still thawing. So your experience is going to be identical to everyone else’s? What about people with unknown health issues, are they going to be fine because you are? So many variables before you even buy the chicken, if you only knew. Yes there is lag time, but why risk it when you can just put it in the fridge the day before and not worry about it?
