It is more useful information to the average person vs. precision and statistics. A leatherworker will be able to give you a rundown on the pros/cons of using one or the other for different applications, which most people are going to care about. Science often doesn’t really assess qualitative features. It would matter though if you needed leather for a specific application that required a certain flexibility, spring constant, strength etc. In that case you would want a much better understanding of the material.

I’d trust a woodworker to design a cabinet or table. I want a scientific analysis of wood materials used for a low-rise apartment building (used for standards). I started getting it when I was 13, and didn’t really make the correlation until I was in University, which was around the time I tried the keto diet, and then it slowly clicked that it was simple sugars, and carbohydrates that triggered it for me. Sugars trigger insulin, and insulin triggers oil production. I asked my doctor to start testing my testosterone regularly, and I started testing my blood sugar levels at home in my late 20s, and confirmed what I had suspected was true.
