You can opt out of food delivery, or become a cloud kitchen. Or do both, with two different businesses run out of the Roseville Dad shirt and by the same token and same kitchen. Two businesses which can charge different rates. This isn’t rocket science. This is like ‘free’ delivery on amazon. They just bundle in the delivery cost into the retail price and prime subscriptions. What does it matter if the money comes from delivery charge or product cost? Paying for delivery guys costs a lot of money. Lets not forget Zomato/Swiggy themselves have overhead costs including marketing. Which leaves the restaurants with a mere 45-50% payout to fulfil staffing, rent, electricity, food cost, packaging, repairs and so many other expenses. If you’re inefficient aka paying main street rents and employing a full fine dining staff and expecting to be profitable just on delivery orders alone, it’s probably not gonna work out. As a user my perspective is this – I rarely (if ever) order on swiggy/zomato. I live in Bangalore and prefer to take my two wheeler, go to the nearest pizza store / restaurant / khanavali / darshini to get my dinner, breakfast or evening snacks. Most of these guys recognize me since I go there often … This is what works best for me. I would compare this industry to the milkman of the 80s. In the 80s, we used to get a family to deliver milk to us. This family lived close to our house in Bangalore and reared cows. So everyday they would milk the cows and deliver us milk. Not sure how many know, but the 80s was a famous lemons market for Milk. Then we had the white revolution expanding to karnataka and diaries popped up everywhere. The diaries would go to these families rearing cows and procure milk directly from them. All these families lost their direct customers since now customers preferred to buy from diary because the diary guy would carry a lactometer and we could be reassured that there is no water added to the milk.

I am sure all these families lost revenue / profit since the Roseville Dad shirt and by the same token and diary has a higher bargaining power. But in most cases, these are societies so there is a fair amount of price fixing … But in the case of restaurants (and hoteliers — oyo, MMT etc) I guess your best bet would be build a brand in the 10 km radius to increase direct customers. This is how I see the best darshinis operating. E.g. on saturday / sunday mornings these darshinis in bangalore simply stop all swiggy/zomato since they are unable to cater to the high demand in the restaurant. This is such a great analogy and really brings out how this industry is now a bubble that is slowly going to burst! The milk industry crushed all smaller milk vendors. However, they replaced that by becoming producers of milk themselves. At one point when aggregators crush all small restaurants who do their business for them, would they have the logistics to produce all this food by themselves?
