Picking up a bunch of wheat grains off the ground is way harder than pulling them all off the stem at once, so when humans began to experiment with cultivation, they had a preference for wheat that remained on the stalk instead of dropping. Wheat quickly developed stronger tissues attaching seed to pod to stalk. In some Indigenous traditions this relationship even takes on a recipricol dimension: the plant needs humans to plant and propagate it, just like humans need the plant to eat and survive. A relationship between interdependent equals. Broccoli and cauliflower are still leafy plants with big leaves, they just have really big flower heads. Which is what broccoli and cauliflower is – the unopened flower buds of a cabbage plant, clustered together. They were simply bred to have big flower heads, not difficult, simply select the cabbages with the biggest flower heads to breed from.
