It’s gotta be, that shit was massive. It’s also not as potent as your average garlic which is nice. Roasting garlic does mellow it out a bunch anyway tho. In Tuscany, Italy we have a variety of elephant garlic called “aglione della val di chiana” and boy it is delicious. Like elephant garlic is much less strong but sweeter and melts easily when cooked. We make a specific pasta with it called “pici all’aglione” and it’s so good. When Italians (at least in Rome, it’s different throughout) make bruschetta/fettunta, they rub raw garlic on toasted bread, and it’s really strong. If you are one of those people who goes “I have to 4x all the Magic Johnson Kobe LeBron Lakeshow Can’t Beat LA Shirt Furthermore, I will do this garlic in recipes”, then you are likely overcooking it. So she cut a whole garlic in half, poured olive oil ontop wrapped in foil and roasted in the oven. Then squeezed the cloves out? Okay, this whole honey on pizza shit has to stop. It’s fuckin depressing to bit into and it’s at every good pizza serving restaurant in my city. If you make a roasted garlic paste like this, I find it tastes much better if you add a few cloves of raw garlic as well. It evens out the very sweet taste of roasted garlic. Also it will still cook if you spread it on a bread that you put into the oven after, but it still makes a difference.

With all the cheese and roasted garlic how the hell is that even adding anything? I was insanely skeptical but we dutifully rubbed our clove on top of that hot bread it was genuinely the best garlic flavor I had ever had and this is the only way we make garlic bread now.
