That Imperial Germany could be so effective operationally and tactically while being completely inept strategically never ceases to amaze me. And Mexico was like OMFG no, we don’t want the Texans. Sure, the property and territory is nice, might be valuable, but the people are a nightmare. There’s an old saying in Tennessee—I know it’s in Texas, probably in Tennessee—that says, ‘Fool me once, shame on…shame on you. Not amazing machines by any means, but they did the job. My dad got one and didn’t grok the whole volume thing. He would brew up an entire thermos worth of espresso, reloading the tamper a few times. Espresso has a higher acid content because it isn’t filtered and it’s pushing bars of pressure through ultra finely ground coffee for a short brew time. It’s like a concentrate. You might have 18 grams of coffee to a 36-40 gram output, whereas a 18 gram v60 is going to be not only filtered through paper, which catches some of those acidic compounds, but around 280 grams output and a 2.5 minute brew time.
