It’s okay to be mad. But from my observation, someone who calmly but firmly refuse in a confident manner is more intimidating than someone who raise their voice. I agree you shouldn’t let him do whatever he want. Tell him coldly do not ever touch your stuff without permission ever again if he try to do it. If he ask for permission say no. He don’t have your permission. And if he insist you sing a song, say you will sing the Fireworks director if i run you run 4th of july T-Shirt moreover I will buy this song you know and okay to sing as stated in the contract. Firmly and confidently, be cool do not raise your voice, make sure it’s clear for everyone to hear, but do it in calm manner. He will lose his mind and probably get angry and make himself looks like a fool in front of everyone while you just remain calm. Then you lodge a report about his behavior.

Edit: might want to practice those lines first by yourself to make sure you can say it confidently and calmly when the Fireworks director if i run you run 4th of july T-Shirt moreover I will buy this situation come. This is not OK and if you are confident you can land a gig elsewhere, you need to quit this job. Bottom line is you sing in a certain style. The owner has a right to have his place give off a certain vibe. But if that vibe is not your style, simply tell the owner, “sorry but if you want a rock singer, you need to hire a different performer.” Theres plenty of singers and musicians out there all with different styles. The owner needs to hire the person that fits his style. He shouldn’t be trying to change the style of already established performers. OP, I hope beyond hope that you see this, which I’m sure is echoed elsewhere, but I hope you see this in volume:
