It makes them develop a bad relationship with food honestly. From my parent’s perspective, I think they truly just meant well. Most folks just have it processed by a shop and pay more than it’s worth. You have to get them gutted and hung really quick and the meat spoils fast so you’ve got to burn the hair, quarter out the carcass and get it all on ice or salt a lot quicker than venison or elk. After that you get it home and finish butchering it in a cold space like the barn or a garage with good ventilation, you have to have your grinder ready, pork fat if you’re adding it, spices and casing for sausage and scrapple, have your cold smoker ready for hams, have your hams in salt and netting and brine the bacon so you can smoke all of that. Your shoulders and loins trimmed up, wrapped and put in the freezer for chops and roasts. The chitterlings, jowls, trotters and snout either need to be preserved, pickled or smoked, I won’t include cracklings because bore isn’t as fat or sweetly fed as pork but people do it. Then you have the remaining offal and bones and unused stuff you have to do something with. It’s a lot of work and most people just won’t do it anymore.

I wonder if it’s a similar reason in America. The best way to hunt them is with dogs. Take them alive and feed them corn for a month, then slaughter and butcher. Have you ever seen a pack of wild hogs? Those mf’s travel in NUMBERS. I live in bumfuck Texas and have had to wait a couple minutes waiting for them to pass. They also have like a gamey texture, similar to deer, that I don’t like. It’s not a typical flavor or texture so it could turn a lot of ppl off.
