If you’ve ever taken a Food Handlers course or have ServSafe certification, you would know that that is absolutely not true. My adhd usually prevents me from planning meals (there are occasional exceptions). Nearly every time I’ve defrosted stuff in the fridge over night I’ve completely forgotten about it the next few day or simply just do not have the energy or motivation to follow through as other things come up and take up my attention and energy.

Like chicken is almost always cooked above 100 degrees celsius for at least a few minutes. Not necessarily just bacteria that’s the issue. When bacteria are in their temperature party zone, they create toxins that don’t get killed by heat, and that stuff is what gives people food poisoning. And the temperature it’s cooked at doesn’t matter, what matters is the temperature reached inside of the hunk of meat. I see. I didn’t know that. I used to think it was okay to defrost chicken in just a tub of water. Thanks for the info! The problem isn’t just the bacteria. Most food poisoning is actually from toxins the bacteria leave behind—bacteria poop, essentially. They’re not something you can kill; they’re not alive in the first place. They’re just substances that cause problems when our bodies try to digest them. After taking servsafe I cannot Handle how some people treat food. I never look at pot lucks where items sit at danger temps for hours and things like that Assuming you can just burn through a tonne of water for something benign like defrosting some chicken lmao, there’s water restrictions in places like Australia people can’t just use 500 litres of water for a snack that’s ridiculous. I’ve been defrosting on the counter top for 20 years and not once have I been sick just don’t be a dumb dumb and let it get warm. Cook immediately after the centre feels defrosted.
